There never seems to be enough hours in the day, especially if you wake up at 3:00 pm everyday like me! I really wanted to workout, pick up groceries, clean a little and maybe screen print.
I knocked out going to the gym and Whole Foods right away. I know we often fall behind on the blog so I finished last nights. Now, I really needed to clean but I would also have liked to get some new designs into Local Goods Chicago, a new boutique where I’m selling my designs. HMPH!
Back to being at Whole Foods. When I walked into the door these little seasoning packages caught my eye. Mmmm Key lime cilantro tacos sound awesome, so I bought a pack and of course they are from Chef Rick Bayless. The man knows Mexican food.
They suggested to use this seasoning with shrimp so I bought some but in the process of heading to the seafood section, a tub of mango salsa caught my eye. Perfect to top my tacos off with.
I also grabbed a couple of limes. Love me some fresh lime juice on my taco.
I don’t know how but finally I was able to light the grill with the chimney and not use lighter fluid! YAY! While that was happening I cut up half an onion and half an Anaheim pepper.
I sauteed them together till tender then added my shrimp. When the shrimp was orange, (takes about 4 minutes max) I added the Rick Bayless seasoning.
While the shrimp was cooking in the sauce I put corn tortillas in foil on the grill. I let them steam on the grill for about 4 minutes. Then I put a hefty amount of my seasoned shrimp on each tortilla and then topped with a spoonful of mango salsa.
At the end a little squeeze of lime on each. MMMmm so tasty and also very healthy! Three of these tacos is around 400 calories! Prep and cooking time is about 25 minutes, shorter if you’re not grilling your tortillas.
