I’d never made it before, but couldn’t imagine it being too hard. I wish I had grabbed a steak at Whole Foods instead of chicken; creamed spinach and steak sounds must nicer. Oh well.
I preheated the oven to 400 and started the coals and guess what…it started raining.
With it coming down so hard I had to use lighter fluid, which greatly effects the food’s taste.
I already had my chicken in the oven when I realized the coals weren’t getting hot. More lighter fluid! I turned the oven down to 350.
I checked on the coals again. It was raining even harder.
MORE LIGHTER FLUID!
I placed the cast iron skillet over the hot coals to protect them. I also used the skillet to make the creamed spinach.
With the chicken almost done and the coals roaring, I melted butter on the cast iron skillet and then added shallots and garlic. Next I added the spinach I cooked inside. After I few minutes I added the cream and let it reduce.
I threw some red onion and red pepper in with my chicken. When the rain has stopped and I was done grilling, it was time to cuddle on the couch with Bobby and watch a little Frasier!
