Day 111- Veggie Quesadilla

017 I would like to start off saying, if you are at all trying to lose weight, maintain your current weight, or whatever. I suggest to download the My Fitness Pal app. I love it!

I’m not sure how accurate it is but makes a nice guideline to follow. It tells you how many calories you do and should consume a day and you can track your progress on there. It’s very handy.

Well, with my remaining calories I wanted to make a healthy small 012veggie quesadilla. After my workout I got a quick pedicure and ran in to Whole Foods. I bought whole wheat tortillas, a red pepper, a jalapeno pepper, red onion, tomato, guacamole and sour cream.

Note, I did not say cheese. I thought for sure we had some shredded Mexican cheese at home. WRONG! All I have is one cheese single and some provolone and swiss cheese.

015So I go out in to the wilderness in search of shredded cheese. 20 minutes later I return empty handed and a little frightened.

Struck out at three locations and someone weirdo cab driver was following me and trying to talk to me. 016I ended up just using the provolone and single.

Turned out quite yummy! On the side I did a big scoop of guacamole and small scoop of low fat sour cream. Never buy low fat sour cream. It’s weird.
