I had some left over bell peppers and red onion in the fridge so I used those, as well as the rice I had left over from Saturday.
I’ve had a rough time lately grilling peppers so I put them on shortly after the chicken. Once I had a good char on one side of the chicken I smeared some horseradish on it, give the chicken a little kick.
On my plate a surrounded the cheesy chicken with grilled veggies and rice, very filling!
