Day 77- Cheesy BBQ Chicken

003I was going to treat myself to a nice big steak but I got lazy and just pulled some chicken out of the freezer. I think the Popeye’s I had for lunch was a good enough treat!

I had some left over bell peppers and red onion in the fridge so I used those, as well as the rice I had left over from Saturday.

012I’ve had a rough time lately grilling peppers so I put them on shortly after the chicken. Once I had a good char on one side of the chicken I smeared some horseradish on it, give the chicken a little kick.

When the chicken was almost004 done I added the BBQ sauce and a mound of shredded cheese. I tucked some grilled onion under the cheese as well.

On my plate a surrounded the cheesy chicken with grilled veggies and rice, very filling!
