Day 66- Mexican Chicken

299 days to go, not sure if I’m gonna make it. It’s a high of 32 today, a huge drop from yesterday’s 63 degrees!
I was gonna do something with the leftover turkey but we forgot to put it in the fridge last night. After staring into the fridge for ten minutes, struggling to decide what to make, I grabbed some chicken out of the freezer.
Good ol reliable chicken.
I simply grilled the chicken with salt and pepper. When I got to work I dressed it up. I got some melted jalapeno nacho cheese, chipolte mayo, guacamole and salsa.
I dumped it all on top like a plate of chicken nachos, minus the nacho chips. I forked and knifed and got nice and full.
