Day Sixty-Four: Cornish Hens

We bought some cornish hens a few weeks ago, but someone whose name rhymes with Kurt left them out and they spoiled.

So, we figured the day before Thanksgiving was a good day to give it another shot.

I hadn’t eaten one of the little guys in years. I had never cooked one.

I rubbed them down with salt, pepper, paprika, and a touch of canola oil.

They didn’t take long on the grill; maybe twenty minutes.

I lightly charred each side, then shut the lid for ten minutes.

I rested it for another five minutes, then Jenny and I dug in.

They were perfect.

A perfect preface to Thanksgiving. My favorite day of the year.
