Day 58- White Wine Halibut

Hey everyone! I’m back on a health kick, so no more of me eating an entire porterhouse and two sides. Back to the calories in the meal I cook and personally hitting the gym more than once a month.

Today after my workout at Xsport I went to the Whole Foods across the street. There I picked up the items for the next three days of grilling. Two are going to be fish and the other a vegetarian dish.

After going back and working on what to make tonight, I finally decided to go with the halibut. I marinaded it in some fresh squeezed lemon juice, white wine, and salt and pepper. For a side I went with some asparagus and some mixed greens.

For this meal I only had to spend about $10.00 on ingredients I didn’t already have at home; the halibut and asparagus.

I decided to saute the asparagus on the stove top and cook the halibut in the cast iron skillet on the grill. Once the coals were hot I placed the skillet on the grill with a little butter.

Once the butter was hot and melted, I added the fish, skin side down. I started cooking the asparagus shortly after putting the halibut on.

The halibut was done in about ten minutes and then I chowed down!

Total calories for this whole dinner was around 600 calories; not too shabby!
