Today after my workout at Xsport I went to the Whole Foods across the street. There I picked up the items for the next three days of grilling. Two are going to be fish and the other a vegetarian dish.
After going back and working on what to make tonight, I finally decided to go with the halibut. I marinaded it in some fresh squeezed lemon juice, white wine, and salt and pepper. For a side I went with some asparagus and some mixed greens.
Once the butter was hot and melted, I added the fish, skin side down. I started cooking the asparagus shortly after putting the halibut on.
Total calories for this whole dinner was around 600 calories; not too shabby!
