Day 44- Hawaiian Pork

Less than a week before we hit the 50-day mark! Still trying to leave chicken out for awhile, so tonight I did pork. Pork soaked in some pineapple juice and soy sauce, along with some extra spices, with a side of mashed potatoes.
This is kind of a summery dish mixed with a Fall/Winter dish. The pineapple being very Summer and mashed potatoes a more hearty Fall/Winter side.
The other day at Mariano’s, the best grocery store ever, Kurt and I picked up a nice thick bone in pork chop. I couldn’t wait to grill it and now the time had come.
First, I marinated the chop for an hour and a half on each side. I also made a small and different marinade for my pineapple.
Once everything had marinated, I started a pot of water for the potatoes. I placed the potatoes in the pot once it began to boil and started the grill.
I cooked the chop for about ten minutes on each side and grilled the pineapple until it had a nice char.
Lastly, I made a gravy out of the marinade by heating it and folding in flour.
I sent the pictures to Kurt while he was at work.
“I want to eat that”, he responded.
It was delish.
