Day 43-Black(ened) Cat(fish)

Happy Halloween!

In the spirit of this haunted day I did a little Blackened Catfish. A little spicy fish on a cloudy Fall night sounded good.

For this dish I rubbed oil and spices on both sides of the catfish and put it in the fridge. After about fifteen minutes I flipped the fish, letting each side soak up all the spices.

I wanted to cook this dish in the cast-iron skillet to get a little more crispiness to it. This was my first time using a skillet.

Before I started cooking the fish I wanted to make some fried onions to put on top. I cut some onion super thin and then battered them. Egg wash, flour mixed with spices.

After I started the grill I got my oil going for the onions. When the oil was hot I placed the onions in and then placed the skillet on the grill. 

By the time the onions were done, after just a few minutes, I figured the skillet would be good and hot. With the fish sizzling away I started making some spinach.

I let the fish cook for about 4 mins on each side and pulled the filets off the grill. I put the fish over the spinach and then the onions on top of the fish. I love lemon and tartar sauce with seafood, so I put a little on the side.

Then I dug in!! So good!

Hope everyone has had a Happy Halloween! We didn’t get any Trick-or-treaters. Looks like I got a lot of candy to eat!
