I didn’t have much time to cook so I whipped up something quick and simple: Chicken Chesapeake. Well, this was much quicker than when I made the steak Chesapeake because I didn’t make the Bearnaise from scratch.
My friend Rita and her fiance Jeremiah came over for a quick goodbye before they flew back to Cali. They took one look at my small little chicken breast on the grill and laughed, it looked rather pathetic.
After I dressed the bare breast in creamy Bearnaise and lump crab meat, I took a photo and send it to Rita. She was singing a different tune after that!
I was able to get a few big bites in before I had to pack it up and head to work. As soon as I got the chance I sunk my teeth in and devoured it!
