Day 28- Grilled Cheese

The other day I came down with the sniffles, so I wanted to make good comfort food. I decided to make vegetable crab soup and a grilled cheese.
I didn’t use the grill to make the soup so its none of your damn business how I made it. It’s a secret.
On my way to the store I saw an old SNL cast member, Rob Schneider! He’s very short, duh, and actually looked pretty good. Then, I bought a super cute jacket from Anthropologie.
At the check out at Jewel, the chain grocery store in Chicago, I forgot how much cheaper it is than Whole Foods. I really need to stop shopping there.
So I got my ingredients for my soup and grilled cheese and scurried home. I started making the soup about two hours before the sandwich, letting all the veggies cook and soak up lots of flavor.
I bought cheese singles at Jewel but also had some goat cheese and manchego cheese at home. I love a little grilled onion on my grilled cheese so I tossed some on the grill while I was building my sandwich.
When then onions were done, i put them in the sandwich and threw it on the grill.I kept the lid down most of the grilling time to let the cheese melt faster.
After about five minutes on each side the cheese sandwich was ready to cut and eat!

Looks good. The colder weather has had me craving soups lately. I wonder how many people have actually had a grilled cheese sandwich prepared on a grill? Pretty sure I haven’t.

I think I still prefer the grilled cheese in the pan, harder to get the crust crispy on the grill.
