Day 20: Beet Salad

Beet salad.

I. Love. Salads.

Which is a bit strange, because I love meat more than anything.

I can’t think of the last time I didn’t eat meat at least twice in one day.

Oh, and Jenny said that it’s smart to put a picture of the finished product at the top of the page so that people can see it first, then decide if they want to read about the whole process.

Fine by me.

I finished work and headed to Jewel.

Sure, it’s no Gene’s (greatest place on earth) or Whole Foods, but they have decent produce and proteins, and there’s one close to my work, so at midnight on a Sunday, it’s a pretty good/the only option.

I really wanted to cook meat.

I always do.

But I walked by the protein aisle and nothing jumped out at me.

So I hit the produce section. And there were beets.

I love beets. They’re delicious.

Beets, cooked.

I decided to do a salad. I knew that I would be buying goat cheese, because it’s a classic friend of the beet.

And then, well what do you know, fennel was right next to the bunches of beets, so I bought a bulb.

There were some great looking Autumn Gold apples that also caught my eye, so wham!, into the basket.

I also bought some smoked almonds (Blue Diamond brand), because they’re essentially legal crack.

I trimmed the leaves from the beets, covered the beets in a touch of Canola oil and salt, and wrapped them in foil.

Funnily enough, I had to use more coals for two beets than for anything else we’ve cooked yet. Those guys take a good deal of cook time; about 35 minutes.

While they cooled, I thinly sliced half the bulb of fennel as well as half of the apple, washed the beet leaves, and laid the leaves down.

I peeled the skin from the beets and sliced them in slivers and arranged them atop their own leaves with the fennel, apple, goat cheese, and smoked almonds.

I picked a few pieces of fennel frond for garnish, squeezed some fresh lemon on top, cracked some black pepper, and salted the salad.

Pretty nice salad.

It was really good.

I know healthy eating is more Jenny’s game than mine, but this is about as healthy as you can get.

Don’t tell anybody.

Maybe next week I’ll grill an opossum just to get my M.O. back.
