Day 18- BBQ Tex-Mex Salad

Lets spice things up on this dreary Chicago afternoon!
I did so with a spicy BBQ Tex-Mex style salad. I used chicken covered in taco seasoning, red onion, cucumbers, mixed greens and canned corn and black beans. For my dressing I used my signature BBQ ranch dressing, half ranch and half BBQ sauce. I used a slightly spicier sauce to go with the Tex-Mex theme.
The first thing I did was start the grill, there is very little prep for this meal. With the grill started I cut my breast into strips. This was not necessary, but the chicken cooked faster this way. Next, I coated the chicken in a premixed taco seasoning and oil, so that it wouldn’t stick to the grill.
With the chicken cooking I chopped up my veggies and opened my can veggies. This is a great meal to take to work and that’s what I did.
This was a cheap, quick and low calorie meal. It only cost about
$15 for four servings! This cost doesn’t include the dressing. Also, this salad can easily be turned into a great vegetarian or vegan meal.
