Day Four- Chicken Kabobs

Well, the weather today could not have been more opposite from yesterday’s. The air crisp, the sky bright blue and the sun warm. As I stepped out on to the sidewalk, a slight breeze blew, sending the intoxicating aroma of the nearby Popeye’s under my nose. The smell of their crispy fried chicken and buttermilk biscuits stopped me in my tracks. I gathered my strength and continued to the market to buy my ingredients for day four.
I picked up some skinless boneless chicken, one red pepper, one yellow pepper, and an unrelated box of Swiss Miss hot coco. ‘Tis the season. I already had some red onion at home to use for the kabob.
I chopped the onion and peppers into squares, then tossed them with oil and salt. I cut the chicken in a similar fashion and dunked it in a mix of oil, salt, pepper, paprika and chili powder.
Once everything was seasoned, I placed them on the skewer in a random order. Each skewer got five chunks of chicken and whatever I grabbed with the veggies.
The coals were hot and ready to do some cooking. I placed the skewers on the grill and let them cook for about 5 minutes on each side.
I was going to make some rice to put the kabobs, but I got a little lazy. Whatever, they are delicious on their own. This is a great quick, cheap, healthy and tasty meal to make for friends and family.
Total cost for four kabobs is only $8!! Calories per kabob is about 410 calories. Prep and cooking time is 30 minutes.
Tomorrow is Kurt’s day to grill, giving me a little break.
